What is OCHAZUKE?
This traditional Japanese dish is easy to prepare and is perfect as a light lunch or a snack.
お茶漬け[Ochazuke] is a simple rice dish usually eaten after a main meal or as a small snack to keep you going between meals.
Moreover, the Japanese like to eat Ochazuke after they drink alcohol.
The dish is easy to make and provides a way to use leftover rice as a quick snack.
As the name suggests, the dish consists of お茶・緑茶[ocha, ryokucha] (Japanese green tea) poured over rice(gohan).
Ochazuke is a simple Japanese dish made by pouring green tea, dashi, or hot water over cooked rice, usually with savoury toppings.
Common toppings include漬物[tsukemono], 梅干し[umeboshi], 海苔[nori] (seaweed), あられ[arare], ゴマ[sesame seeds], たらこ[tarako], 明太子[mentaiko](salted and marinated Alaska pollock roe), 鮭[salted salmon], 塩辛[shiokara ](pickled seafood) and わさび[wasabi].

Origin of OCHAZUKE
Ochazuke first became popular in the Heian period, and not tea but hot water was used for Ochazuke in the Heian period.
Present Japan's rice cooker has the function to keep rice warm after rice is cooked.
It is at 1965 that Japan's rice cooker that had the heat insulation function was developed.
Therefore, the tool to keep rice warm did not exist at the Heian period(794-1191).
Ochazuke is Japanese people's wisdom at the Heian era to eat warm rice.
This is a reason with the custom of eating meal on which they poured the hot water.
And, this was called "湯漬け[yuzuke]" at that time.
Beginning in the 江戸[Edo(1603-1868)] period, tea was often used instead.
Boiled rice only of pouring hot water ; there is no saltiness in it.
Therefore, people in Edo period put food with strong saltiness and ate YUZUKE.
They are 漬物[tukemono], the fishes, and roes.
And it is present very ochazuke.
